Russian sturgeon – a valuable food fish of Caspian, Black and Azov sea basins.
Russian sturgeon – the fish has excellent flavouring qualities. Meat of Russian sturgeon is highly appreciated. Fat content and its caloric content are high enough. It is used in food – fried or boiled. Also sturgeon is used for making dried and smoked balyk products which are the valuable delicatessen. The most processible weight of Russian sturgeon is 3 kg and more. Unpressed caviar of Russian sturgeon is on the second place after beluga caviar on its value. A notochord (visiga) and conjunctive tissue of hard roes are used for production of the food products, a swimming-bubble for producing valuable glue (the fish glue) etc.
