
What Is Bester Caviar? A Guide to Aquatir’s Beluga–Sterlet Hybrid
Bester caviar is black caviar from a hybrid of Beluga and Sterlet. The name refers to the fish, not to a mixture of two finished caviars. Aquatir includes Bester alongside Beluga, Russian Sturgeon and Sterlet, giving buyers another distinct option for a tasting or a special meal.
What makes Bester different?
According to the Aquatir Bester caviar description, its pearls are medium to large, approximately 2.5–3.5 mm, glossy and dark grey to deep black. The producer describes a silky texture and a balanced, buttery flavour with nutty notes. These characteristics are a useful starting point for choosing, although natural variation and personal taste mean that every tin should be appreciated on its own.
A hybrid is not a quality grade. The species name tells you about origin; the condition of the product, processing, storage and handling also matter. Nor should Bester be described as pure Beluga: the distinction is part of what makes the product worth exploring.
Bester, Beluga or Sterlet?
Aquatir lists larger pearls of around 3–4 mm for its Beluga caviar and smaller pearls of around 2–2.5 mm for its Sterlet caviar. Bester offers an interesting comparison between those descriptions, but it should not be expected to taste like an exact midpoint. The best comparison is made with equal portions and the same simple accompaniments.
For a first tasting, pair Bester with Sterlet caviar to explore differences in pearl size and texture. For a broader experience, add Russian Sturgeon and keep a short note of each variety’s finish.
Three ways to serve Aquatir Bester caviar
- On its own: start with a small spoonful, without lemon or onion, so you can judge the texture directly.
- On a small blini: add a thin layer of crème fraîche and a modest topping of caviar. Keep the pancake cool enough that it does not warm the roe.
- With a potato canapé: use a plain cooked potato slice and a little mild sour cream. Add the caviar after the potato has cooled.
Choose the tin around the occasion
For a small tasting, calculate the portion before selecting the tin. A 30 g tin divided between two guests gives 15 g each. If caviar is a garnish on 12 canapés, the same tin provides approximately 2.5 g per piece. These are menu examples, so adapt them to your appetite and the rest of the meal.
Check the selected product’s weight and processing option before ordering. Use the storage temperature and date printed on the actual tin, keep it refrigerated and open it close to serving. An attractive table should be ready before the caviar comes out of the refrigerator.
