Cucumber Canapés with Aquatir Sterlet Caviar: A Fresh Summer Recipe
Cucumber canapés with black caviar are a fresh alternative to bread-based appetisers. The crisp base needs no cooking and leaves room for the caviar’s texture. This recipe pairs Aquatir Sterlet caviar with a small spoonful of thick crème fraîche and makes 12 bites for four guests.
Why choose Sterlet caviar?

Ingredients and timing
- 1 large, firm cucumber, enough for 12 slices
- 60 g thick crème fraîche or mild sour cream

Allow around 15 minutes for preparation and assembly. There is no cooking step. The recipe contains fish and milk. Choose an unseasoned dairy topping: a strongly flavoured spread can overwhelm the small portion of caviar.
How to make the canapés
- Wash and dry the cucumber. Cut 12 even rounds approximately 1 cm thick. Leave the skin on if it is tender, or peel alternating strips for a softer edge.
- If the centre is very watery, remove a little of the soft seed core with a small spoon, without cutting through the base.
- Pat the surfaces dry with a clean kitchen towel. Do not salt the cucumber in advance, as this draws out water.
- Add approximately 5 g of crème fraîche to each round. Keep the topping in a small mound rather than spreading it to the edge.
- Divide the 30 g of caviar between the 12 canapés, giving roughly 2.5 g per piece. Handle the pearls gently with a clean spoon.
- Add a tiny dill tip if desired and serve promptly on a cool platter.
How to avoid a watery platter
Dry cucumber and a thick topping are more important than elaborate decoration. Avoid adding lemon juice directly to the rounds or mixing extra liquid into the cream. If you want citrus at the table, offer it separately so each guest can decide after tasting.
Keep the caviar and dairy refrigerated according to their packaging until assembly. For a longer gathering, build a small batch first and replenish it rather than preparing every canapé far in advance. The cucumber will stay crisper and the topping more distinct.
Adapt the recipe to your guests
For six guests at three canapés each, make 18 rounds and plan approximately 45 g of caviar at the same topping size. If you prefer a bread base, use small plain toast rounds and let them cool completely before assembly. The key is to preserve the same restrained balance of base, cream and caviar.
